Albondigas de Pavo ( Spanish Style Turkey Meatballs )Suggested beer type: PorterIngredients:Makes approx. 20 2 lb. Ground Turkey 2 oz. Dark Beer, cold (Porter or Stout) 1T. Salt 6 Twists Cracked Black Pepper Pinch Chipotle Powder 1 Egg 1 tsp. Dijon Mustard 2 Garlic, minced 2 Shallot, minced 1 tsp. Fresh Herbs, chopped (Rosemary, Thyme, etc.) Shot Tabasco Sauce Dash Worcestershire Sauce ½ Cup Coarse Bread Crumbs Preheat the oven to 375º Instructions: Method: Place ice water in a mixing bowl to chill. Assemble ingredients. Remove the ice water from bowl. Blend the turkey meat with the beer and the salt using the mixing paddle of an electric mixer or your hands (wear gloves) until the mixture becomes tacky to the touch. Season with cracked pepper and chipotle, add the remaining ingredients, except bread crumbs. Finish by blending bread crumbs into the mixture. Then roll the turkey into 1½ oz. balls.
